I work for a top 100 Fortune 500 company and in California specifically. . There is clear favoritism , at least towards myself. Getting days off for is not easy for me when it comes to being week of. But to a handful of others it’s given rather quickly. But what’s even more telling is that when it comes to using vacation / sick hours I’m required to use them for days I call out or days I have off. Example: I just called off and wanted to use 6 hours but my manager forced me to use 8 because that’s policy. When you haves vacation your required to use 8 hours to cover those days but my manager lets ppl take days off and not use any hours which leads to them accumulating hundreds of hours. Or he lets ppl get time off when not having any hours to cover the days off.
But when I get time off or call out he automatically puts 8 when I tell him I want less. It’s obviously favoritism.. . But is it something I should speak up about or complain about or just leave it alone ?

I am not claiming human nature is fair, only that it IS.
That said, you claim there is favoritism towards you, and immediately complain about favoritism AGAINST you. Make up your mind.

No. Favoritism is a fact of life. It is unreasonable to believe you can be a jerk and be treated the same as everyone else. But all company policies should apply equally.
Everyone cries about 'it's not fair' about anything and everything.. Too bad..
If they are following policy for you, then you don't really have any valid complaints. If the policy is that you have to take 8 hours, then you can't complain that they won't let you take 6 hours.
You can say that they are doing these things for other people, but since you are neither them or their supervisor it is just hearsay or assumptions on your part.
A lot also depends on things such as if you are an EXEMPT or NON-EXEMPT employee. If you are full or part time, and how long you have been with the company.
There could also be cases that these other employees have "comp time". That is they may have put in extra hours at one point and to make up for that they are taking additional time off.
As an example, our company just completed a huge project. Several salaried employees were working 60-80 hours a week for a couple of weeks. We had no issue letting them take a day or two off as "comp time".
If you want to still complain you can. But if you are wrong and it is due to one of the cases above you could be seen as a "troublemaker", or the office "snitch".
Yes, favoritism is wrong and it can also be a legal liability concern for employers.
However, if there is a valid reason someone else is getting perks that you aren't getting, it's not favoritism. It's part of their compensation.
I have 45 employees all of whom make different contributions to my business and who have different preferences and priorities. I do not treat them all the same and they wouldn't like that, either.
I doubt you have access to the employment and payroll records of other employees so you really don't know what someone else is or isn't getting and why. And quite frankly, it really isn't any of your business.
